Trahanas soup

The best soup for the winter's cold nights

-1 Glass Cyprus trachana
-4 ½ - 5 cups water
-1 Vegetable broth
-200 gr halloumi cheese (optional)
-Salt
-Pepper for serving
-Lemon juice (optional) for serving
  1. Put water on the fire until it boils
  2. Put the broth and let it for 1 minute to boil and then place the trachana
  3. Let it cook for 30 minutes (stirring frequently)
  4. 5-10 minutes before the end, add the salt and halloumi, diced (if necessary fill with ½ cup water)
  5. Stir well for 5 minutes and remove from fire

Tips: For richer taste when serving add a little lemon juice and pepper. The Trahanas should not porridge so if you need fill with ½ cup water.

Vegetable soup

Vegetable soup with beef ideal for the entire family

-1 kilo veal or beef boneless (cut into pieces)
-2 Large potatoes (cut into pieces)
-2 Carrots (cut into pieces)
-2 Ζucchini (cut into pieces)
-2 Onions (cut into pieces)
-½ cup rice
-1 Beef broth (optional)
-Celery chopped
-Salt
-Pepper
-Lemon for serving
  1. Boil our meat in water for about 2 hours (not very high heat to prevent it from getting hard)
  2. When is almost cooked remove it from the heat and remove the water
  3. In the water where we boiled our meat, place potatoes, carrots, onions,zucchini and broth
  4. Let them cook for about 20 minutes until they are soft and tender (if necessary fill water)
  5. Put the rice with salt and pepper and cook for another 10-15 minutes until cooked rice

Tips: For a faster recipe (30 minutes), do not use beef and follow steps (3-5) and add in the end a little bit of olive oil.
